Usually a good idea to wait for a month of so, just in case of another hideous SP bug that got through. Although it doesn't always make things faster (SP1 for Vista tended too, but that's only because original Vista was such a fucking mess), XP SP3 is always a tough call because whilst it had some benifits one of the major drawbacks is a potential drop in performance.
