Chop Suey

 

INGREDIENTS:

 

* 4 - 6 ounces (115 - 175 grams) chicken meat, thinly shredded

* 1 teaspoon salt

* 1/4 egg white

* 1 tablespoon thick cornflour/cornstarch paste - (1 part cornflour with 1.2 parts cold water)

* about 1/2 pint (300 ml) seasoned oil (see below)

* 1/2 teaspoon finely chopped garlic (optional)

* 1 tablespoon thinly shredded fresh ginger ro(b)ot [can anyone send me a body part of Gemmill???] :)

* 3 - 4 spring onions, thinly shredded

* 4 - 6 ounces (115 - 175 grams) bean sprouts

* 1 small green pepper, cored and seeded, thinly shredded

* 1/2 teaspoon caster (superfine) sugar

* 1 tablespoon light soy sauce

* 1/2 tablespoon Chinese rice wine

* 2 tablespoons stock

* pinch of MSG (optional)

* a few drops sesame oil

 

PREPARATION:

Mix the chicken shreds with a pinch of the salt, the egg white and about 1 teaspoon cornflour/cornstarch paste. Blanch them in warm oil, stir to separate, then remove and drain them.

 

Pour off the excess oil, leaving about 2 tablespoons in the wok, stir-fry all the vegetables for about 1 minute, add the remaining salt and sugar, blend well, then add the chicken with the soy sauce and wine, stir-fry for another minute, and add the stock and MSG, if using; finally thicken the gravy with the remaining cornflour paste, garnish with the sesame oil and serve hot.

If I get the chance to cook this in the near future, the meal will be accompanied by a bottle of 'Laughing Magpie' from d'Arenberg...

Egg & Mushroom

 

large, flat mushrooms

eggs (pref small)

cherry tomatoes

olive oil

bread

 

 

Heat baking tray in oven to 220C

Wash and peel mushrooms, then carefully cut out a round space for the egg without breaking the outside

Brush with olive oil - put on tray in oven for ten minutes

 

for each mushroom (after 10 minutes)

break egg carefully into cup or bowl

carefully spoon up yolk without breaking and place in hole in mushroom - then add enough egg white to fill up the space

 

place in oven

add cherry tomatoes tossed in olive oil

 

cook for another 8-10 minutes

 

serve on thick slices of warm toast

Indian Skinheads on a raft:

 

Ingredients:

 

3 slices of bread

Lurpak butter

1 tin of Heinz Beans (or other favourite brand)

1 tbl spoon of curry powder

 

Put beans in saucepan with curry powder and heat on a medium gas for around 5 - 10 minutes.

 

Whilst beans are heating place bread in toaster and toast until desired shade of brown, let cool for a few minutes then butter heavily with Lurpak. Cut into halves and place neatly around the edge of large dinner plate (alternatively pour beans over toast), pour beans into middle of plate.

 

Wash down with nice hot cup of tea. :)

Beef and burgandy pie.

 

500g of thick cut fillet beef

3 french shallots - diced

6 medium mushrooms - diced

5 rashes of short cut bacon

puff pastry

gravy - 100ml (make it buy it your choice)

1/2 cup of red wine

cracked pepper

1 egg

 

Sear meat in fry pan, remove when medium rare.

Fry bacon add shallots and cook until shallots are translucent.

 

Dice meat and bacon into 3/8" cubes add to diced mushrooms and shallots.

Mix well.

Take gravy add wine and cracked pepper to taste.

Pour gravy mix over pie filling.

 

Using pie tray lay out base pastry then fill with pie mix.

Cover pie with pastry top, brush top with egg then bake until golden.

 

Accompany pie with either the shite cooking wine you just used or a good Tasmanian, Victorian or New Zealand pinot noir.
