Re Pasta I usually make this: I large onion chopped fry until soft add 3-4 cloves garlic - very finely chopped, fry for 30 secs 1tsp chilli powder + 1tsp paprika - chuck in fry for 30 secs or so 2-3 finger chillies finely chopped Add chopped tomatoes or passata and equal quantity water good squirt tom puree squirt lemon juice pinch salt pinch sugar Turn down heat to a slow simmer Plenty freshly ground black pepper leave to simmer and reduce Add meat of choice, smoked ham and chorizo works rather well. Simmer and reduce until perfecto Add pasta

A tomato base is a tomato base, added to it was Scotch Bonnet to add the bonnet flavour (which is lush) and a (very) little heat. A ketchup is simply a smooth sauce made from tomatoes, any pizza with a tomato sauce base has ketchup on it, literally.

So what exactly goes onto a pizza, sauce wise, if not a tomato sauce ?? before you stick other stuff on it ??

I have had plenty that purport to be "good pizza" always thoroughly underwhelming. Choice of last resort on any menu for me. Nearest I ever got was 100% homemade, using eldest sons Scotch Bonnet chilli ketchup as tomato base. (not overly hot but flavour came through, scotch bonnet the king of chilli's for me).

Fucking sad indictment of "the Brit" don't recall anywhere else I've been were there is so much shite dumped like there is here (or wherever Brits take over)

Sorry like, but who mentioned pork, a sausage has to be a sausage irrespective of dead animal (or plant) involved, a beef fillet is never a sausage unless processed into one. Ergo a beef wellington could never be considered a sausage roll. I would agree pies don't have to be filling wrapped in pastry, BUT I am struggling to think of anything pastry wrapped that isn't a pie, a beef Wellington is basically a posh steak bake. I like Italian food but pizza is just glorificato formaggio sul toast

Pizza is bread with a topping (or toppings) as is cheese on toast Beef wellington is beef in pastry (with a mushroom coating preferably) no sausage involved, so it's a pie not a sausage roll Personally I would rather have the toppings on the side with a nice chunk of rustic loaf and a balsamic/oil dip and then Pasta
