I employ the pan lid technique .

 

Rather than flipping them or messing about with a teaspoon basting them , plop a domed pan lid on them once half set .

 

Few seconds later and you're in . Needs attention if a runny yolk is desired as it turns quickly mind .

 

shall try this next time I have an egg. :)

Used Delia's soft boiled egg method mind, works a treat.

 

Bring water to a gentle simmer, add eggs to it for 1 minute, then take the pan off the heat, lid on , and leave it for 6 minutes.

Yolk is runny, white is set, perfect every time.

Aye they look like they'd come out a bit too perfect if you like. Can't beat an egg poached the proper (Graeme Souness) way.
