Re Pasta I usually make this: I large onion chopped fry until soft add 3-4 cloves garlic - very finely chopped, fry for 30 secs 1tsp chilli powder + 1tsp paprika - chuck in fry for 30 secs or so 2-3 finger chillies finely chopped Add chopped tomatoes or passata and equal quantity water good squirt tom puree squirt lemon juice pinch salt pinch sugar Turn down heat to a slow simmer Plenty freshly ground black pepper leave to simmer and reduce Add meat of choice, smoked ham and chorizo works rather well. Simmer and reduce until perfecto Add pasta

A tomato base is a tomato base, added to it was Scotch Bonnet to add the bonnet flavour (which is lush) and a (very) little heat. A ketchup is simply a smooth sauce made from tomatoes, any pizza with a tomato sauce base has ketchup on it, literally.

So what exactly goes onto a pizza, sauce wise, if not a tomato sauce ?? before you stick other stuff on it ??
