It'll be cos hardly anyone celebrates boxing day, so nowhere else is on holiday, which impacts TV audiences presumably. Works fine this time cos the 27th falls on a Sat, but where Boxing Day falls in the middle of the week, they'll still have to do it on the day or else they won't be able to fit all the games in over the Xmas period.

There's definitely an argument for everyone in the UK and further north than us to be on vitamin D cos we don't get enough sunlight, particularly at this time of year. I take vitamin D for that reason. I think I'm on 3 or 4000 IU per day. Whether you could get the same from food or not, I don't know.
